Mango Chutni Glazed Ham

Ingredients
  • 1 medium boneless gammon joint (smoked or unsmoked), about 1.5kg
  • 2.5cm piece ginger, peeled and sliced
  • 1 tsp. coriander seeds
  • 1 tsp. black peppercorns
  • 4 cloves
  • 1 cinnamon stick, broken into two
  • 2 bay leaves

Mango Chutni Glaze

  • One pot The Spice Tailor Original Mango Chutni
  • 4cm knob of ginger, peeled and finely grated
  • Finely grated zest and juice of 1 lime
  • 1 tbs. wholegrain mustard
Method
  1. Put the gammon in a large pan and cover with cold water. Bring to the boil then skim off the froth and scum on the surface of the water. Once the water surface is clear, turn down the heat slightly and add the spices and bay leaves. Simmer gently for an hour, topping up the water level with boiling water, if necessary. Take the pan off the heat and leave the ham to cool in the liquid.
  2. Preheat the oven to 180°C/Gas. Lift the ham out of the water and place on a roasting tin. (Save the poaching stock for making soup). Mix together all the ingredients for the mango chutni glaze. If the gammon has a rind, remove it but leave a thin layer of fat covering the ham. Spread an even layer of chutni glaze all over the ham. Roast for 45 minutes, basting occasionally with the glaze and pan juices, until the gammon is cooked through and golden-brown all over
  3. Remove from the oven and set aside to rest, then carve into thick slices to serve. If you have any chutni leftover, serve it alongside the glazed ham
